Yukon Gold Potato Salad

Preheat oven to 350°F


10 lbs yukon gold potatoes
1 lbs bacon, cooked
2 red onions
4 ears corn, cut off the cob
½ bunch parsley
½ cup olive oil
½ cup champagne vinegar


Cook potatoes in over at 350°F for 30 minutes. Toss with olive oil, salt, peppers and garlic. Chop the bacon. Saute the corn until brown. Saute the red onions with sugar, salt, pepper and chopped parsley.

Mix all ingredients together. Finish with champagne vinegar and salt & pepper to taste.

Serves 10-12
