Waldorf Salad

3 cups apples, peeled diced (3 to 4 – Cortlands are good)
¾ cup orange juice
1 cup celery, diced
⅔ cup walnuts, chopped
dash salt
½ cup mayonnaise


Cut the apples and place them in a mixing bowl with the orange juice. Stir until the apples are coated with juice. Let stand for 5 to 10 minutes, stirring occasionally.

Drain the apples very well. Add the remaining ingredients to the apples, using only enough mayonnaise to moisten the salad. Mix well. Chill the salad for at least 1 hour before serving.
