Spinach Frittata

6 eggs
⅓ cup milk or cream
⅓ cup thinly sliced scallion
3 Tbsp. butter
½ tsp. salt
⅛ tsp. pepper
1 cup (lightly packed) shredded Swiss cheese


Wash and trim 1 to 2 lbs. Spinach. Place wet spinach in saucepan over medium-low heat and heat until spinach wilts. Drain and chop set aside.

Beat together eggs, milk or cream, salt and pepper and set aside.

Melt in an heavy frying pan 3 Tbsp. butter. Add scallions and saute until soft. Spread spinach evenly in frying pan. Pour egg mixture over spinach.

Cook over medium-low heat until eggs are almost set. Sprinkle cheese on top, then cover and cook until cheese melts and eggs are set and puffed. Total cooking time 12-18 minutes.

Serves 4-6
