Spiced Tropical Fruit

1 pineapple, skinned, cored, cut into chunks
1 mango skinned, cored, cut into chunks
1 papaya, skinned seeded, cut into chunks
2 kiwi, skinned, cut into chunks

Simple Syrup:
1 qt. water
2 ½ cups sugar
¼ lb. crystallized ginger
5 star anise
1-2 stalks lemongrass discard ends and any brown pieces
¼ tsp. vanilla
¼ tsp. black pepper
1 Tbsp. lime juice


Combine water, sugar, ginger, anise, lemon grass, vanilla and black pepper in a pot. Simmer for 2 hours. Let cool in refrigerator overnight. Strain. Toss fruit, lime juice and enough simple syrup to coat fruit. Spoon over frozen yogurt, sponge cake or ice cream. Spoon some extra syrup on top.
