1 lb. Italian sausage meat, no casing, crumbled
1 red onion, chopped
1 carrot, diced small
2 celery stalks, diced small
2 garlic cloves, chopped
1 apple, diced small
salt and pepper to taste
½ cup olive oil
½ baguette, cubed
½ qt. turkey stock
1 pinch chopped fresh sage or dried sage powder
1 pinch fresh thyme or dried thyme
In a small roasting pan or stock pot. Warm pot, add olive oil and sear sausage meat until golden brown. Add onion, carrots, celery, garlic and fresh herbs together and roast for 10 minutes. Add apples and roast for another 5 mins. Add turkey stock. Bring mixture to a boil and cook for 5 minutes. Little by little, add the baguette cubes until all the liquid has been absorbed. Cook for 5 more minutes after that. Add salt and pepper to taste. Serve hot, or let cool if being used to stuff a turkey.
