1 lb. Italian sausage meat, no casing, crumbled
1 red onion, chopped
1 carrot, diced small
2 celery stalks, diced small
2 garlic cloves, chopped
1 apple, diced small
salt and pepper to taste
½ cup olive oil
½ baguette, cubed
½ qt. turkey stock
1 pinch chopped fresh sage or dried sage powder
1 pinch fresh thyme or dried thyme
Warm a small roasting pan or stockpot over medium high heat. Add olive oil and sausage and sear meat until golden brown.
Add onion, carrots, celery, garlic and fresh herbs and pan-roast for 10 minutes. Add apples and cook for another 5 minutes. Stir in turkey stock, bring mixture to a boil and cook for 5 minutes. Little by little, add the baguette cubes until all the liquid has been absorbed. Cook for 5 more minutes. Add salt and pepper to taste.
Serve hot, or let cool if you’re going stuff a turkey.
