Roasted Leg of Lamb

Preheat oven to 400ºF


1-3 lb. boneless lamb leg
2 Tbsp. herbs de provence
salt and pepper


Press herbs onto lamb. Sprinkle generously with salt and pepper. Place in oven. After 10 minutes, reduce heat to 325ºF. Using a thermometer, cook to 125°F for medium-rare about 1-1 ½ hours.

Let stand 10 minutes before slicing.
