Pasta Broccoli Soup

5 lbs. broccoli
½ lb. pasta of your choice
1 onion, chopped
2 Tbsp. garlic, chopped
1 gallon vegetable stock
3 Tbsp. olive oil
salt and pepper to taste


Using a large pot, sauté broccoli, onions, and garlic in olive oil. Add vegetable stock and simmer for 20 minutes until broccoli is cooked. Remove the broccoli from the stock, and add pasta. Cook pasta as directed until cooked leaving finished pasta in the broth. Return the broccoli to the broth and add salt and pepper to taste. Enjoy.
