Papalo Salad & Papalo Vinaigrette

Papalo Salad

3 cups mesclun greens
1 cup chopped papalo leaves
1 ripe avocado
4 slices tomato cut in half
½ cup papalo vinaigrette

Papalo Vinaigrette

⅓ cup virgin olive oil
juice of ½ lime
¼ cup finely chopped papalo leaves
¼ tsp. sugar
¼ tsp. salt
½ tsp. dijon mustard
fresh ground pepper to taste


Mix the mesclun greens and papalo leaves. Dress with the vinaigrette.

Garnish the salad with the halved tomato slices and 8 slices of ripe avocado.

Serves 4
