Orange Marmalade

6 oranges (cara cara or mineola)
2 Meyer lemons
6 cups water
6 cups sugar


Cut peel off oranges, Thinly slice an put peel into a sauce pot. Finely chop oranges and add to the pot. Cut lemons into eighths and discard seeds. Thinly slice and add to pot with water. Simmer for 1 hour.

Remove from heat and refrigerate for 12 hours. Bring back to a simmer and add most of the sugar. Simmer until tender about 1 hour 15 minutes. Check to see if more sugar is needed. Let cool and enjoy.
