Kohlrabi & Apple Slaw

1 lb. kohrabi, peeled and cut into matchsticks
2 Granny Smith apples, peeled and cut into matchsticks
¼ cup heavy cream
1 Tbsp. lemon juice
½ Tbsp. Dijon mustard (regular or whole seeds)
½ tsp. sugar
salt and pepper to taste


In a large bowl, whisk cream into light pillows. Stir in lemon juice, mustard, sugar, salt and pepper. Add kohlrabi and apple, and mix until evenly coated. Serve immediately.
