From Our Kitchen
 
        		
        1 large 		jicama, peeled, cut into 3½” strips
		1 			orange peeled, cut into wedges
		¼ 			red onion, thinly sliced
		1 cup 		fresh cilantro, chopped
		¼ cup 		fresh lime juice
		1 pinch 		cayenne pepper
					salt to taste
Mix all ingredients together and let sit for 1 hour.
