Grilled Pizza

Preheat grill at medium heat.


1 bag (1lb.) pizza dough
2 Tbsp. olive oil
salt & pepper

4 yellow onions, thinly sliced
goat cheese
balsamic vinegar


Add 2 Tbsp. olive oil to a large sauté pan over medium-high heat. Add onions and do not stir until they start to brown. Turn heat down to medium. Continue cooking onions until they are caramelized, only stirring to prevent sticking. Can be done ahead. (When grilling pizza, onions should be reheated).

For the dough: Divide dough into two equal pieces. Cover and let rise 1 hour. On a floured surface, flatten dough and work into a circle. Rub both sides with olive oil. Place on grill and cook until golden brown.

Flip over and place warm onions evenly over pizza. Sprinkle with goat cheese. Cook for 2-3 more minutes. Remove from heat. Drizzle arugula with olive oil, balsamic vinegar ad season with salt & pepper. Cut pizza into wedges and place arugula on pizza.
