Gazpacho Salad with Avocado

1½ lbs. assorted heirloom tomatoes, chopped
1 cucumber, peeled, seeded and sliced
1 small red onion, diced
2 bell peppers, chopped
1 head romaine lettuce, cleaned and chopped
2 ripe avocados, sliced
¼ cup extra virgin olive oil
1 Tbsp. sherry vinegar
1 Tbsp. lime juice
salt & pepper


In a bowl, mix together first five ingredients. Lightly coat with olive oil, sherry vinegar and lime juice. Gently fold in avocado and salt and pepper to taste. Serve.
