Cucumber Watercress Salad

1 English seedless cucumber, diced
1½ cups watercress leaves
3 Tbsp. honey
3 Tbsp. white wine vinegar
3 Tbsp. cold water
3 Tbsp. fresh dill, finely chopped
coarse salt to taste


Combine cucumbers and watercress in a large bowl. In another bowl, whisk the honey, vinegar and water together. Pour over salad and toss well to combine. Season with dill and salt and toss salad again.
