Croque Madame

Preheat oven to 350° F.


8 slices sourdough bread
¼ lb butter
4 Tbsp. smooth Dijon mustard (such as Maille)
16 slices cooked turkey breast or turkey deli slices
8 slices Swiss cheese


Make sure each slice of bread is consistent in size. Butter each slice of bread on one side.

Spread a light coating of mustard on top of the butter (you can omit the mustard for children). Cover each slice of buttered bread with a slice of Swiss cheese, then place 2 slices of turkey on top of one slice of bread per sandwich. Place one slice of bread with cheese on top of the turkey so that the cheese and meat are in the middle.

Press each sandwich together, then place on a sheet pan and bake in oven at 350° F for 8 minutes or until brown. Turn and bake for two more minutes until golden brown.

Serve with fresh tomato slices.
