Cranberry Orange Bread

Preheat the oven to 350ºF. Grease a 9-by-5-inch loaf pan.


¼ cup butter or margarine, softened
2 cups flour
1 cup sugar
1½ tsp. baking powder
½ tsp. baking soda
1 tsp. salt
½ cup orange juice
1½ tsp. orange peel, grated
2 eggs
1½ cups cranberries, coarsely chopped
½ cup nuts, chopped


Sift the flour, sugar, baking powder, baking soda, and salt together into a mixing bowl. Cut the butter with a pastry blender or two knives. Combine the orange juice, peel, and eggs and stir them into the flour-butter mixture. Add the cranberries and nuts. Place in the prepared pan and bake at 350ºF for approximately 55 minutes.
