Cranberry Cornbread Stuffing with Sausage

Preheat oven to 350ºF.


5 lbs. cornbread, cut and dried
1 lb. cooked cranberries
1 lb. Italian sweet sausage, chopped
1 onion, chopped
4 stalks celery, chopped
3 carrots, chopped
½ gallon turkey stock
2 Tbsp. Bell’s Seasoning
¼ lb. butter


Sauté the onion, celery, carrots, and sausage in butter. Add Bell’s Seasoning and cranberries. Simmer for 5 minutes. In a large mixing bowl add dry and chopped cornbread. Add sauteed items to cornbread and mix well. Add stock until incorporated well.

Stuff turkey with stuffing and bake with turkey. Alternately you can bake it in a 8” x 10” baking dish, covered for 30-40 minutes until golden brown.
