Crab Stuffed Artichokes

Preheat oven to 350º F.


6 marinated baby artichokes, cut in half, rinsed and drained
4 oz. cream cheese
2-3 oz. fresh crabmeat
2 Tbsp. grated Parmesan
1 Tbsp. red bell pepper, diced
1 Tbsp. scallion, chopped
1 tsp. parsley, chopped
⅛ tsp. Cajun seasoning
1 pinch old bay seasoning
1 dash Tabasco (optional)


Combine all ingredients except the artichokes. Divide filling into artichokes and place on a sheet pan. Bake for about 8 to 10 minutes. Serve.
