Chilled Athena Melon Soup with Fresh Mint

From Our Kitchen


3 cantaloupes, peeled, deseeded and diced into 1-inch pieces
3 cups plain yogurt
¼ cup brown sugar
¼ cup condensed milk
1 Tbsp. fresh mint, chopped


Mix all ingredients in a large bowl. Add to blender or food processor and puree. Serve cold with a sprig of fresh mint for garnish.
