Chef Jeff's Heirloom Gazpacho

From Our Kitchen


½ gallon heirloom tomatoes, deseeded
2 peppers, chopped
3 cucumbers, deseeded
2 red onions, chopped
1 pint orange juice
⅓ cup lime juice
4 Tbsp. olive oil
1½ Tbsp. salt
1 Tbsp. pepper
⅓ cup sherry

Combine all ingredients and puree until desired consistency is reached. Adjust seasoning with salt and pepper.

Serves 2-4
