Chef Jeff's Cauliflower Casserole

Preheat oven to 325°F


1 head white cauliflower, chopped
1 head yellow cauliflower, chopped
6 eggs
2 cups light cream
¼ cup Swiss cheese, shredded
¼ cup Romano cheese, shredded
¼ cup Parmesan cheese, shredded
¼ cup mozzarella cheese, shredded
salt and pepper to taste


Place chopped cauliflower in a baking dish. Top with Swiss, Romano and Parmesan cheeses.

In a medium bowl, mix egg and cream together. Pour over cauliflower and cheese mixture, and bake for 20 minutes.

Remove dish from oven and increase heat to 350°F. Top cauliflower with mozzarella cheese and bake for another 20 minutes, or until cheese is golden brown. Serve with tomato sauce or hot sauce.
