Broccoli Quiche

Preheat oven to 350°F


2 eggs
1 egg yolk
¾ cup milk
¾ cup light cream
½ tsp. salt
½ tsp. dry mustard
⅛ tsp. pepper
1 tsp. Worcestershire sauce
dash nutmeg
dash cayenne pepper
1½ cups cooked, chopped broccoli
1 cup lightly packed shredded swiss cheese


You can always add a little cooked bacon, ham or sausage if you don’t like meatless quiche.

Prepare a 9-in. pie shell. Either bake it partially at 375°F for about 8 minutes or brush the inside with slightly beaten egg white to prevent a soggy bottom.

Preheat the oven to 350°F. Beat the eggs, egg yolk, milk, cream, salt, mustard, pepper, Worcestershire, nutmeg, and cayenne together in a large mixing bowl until well blended. Spread the broccoli and cheese over the bottom of the pie shell. Pour the liquid mixture over the broccoli and cheese. Bake at 350°F for approx. 40 minutes or until lightly brown and set.
