Beet Gazpacho

From Our Kitchen


2 large beets, cooked, peeled and diced
3 chopped garlic cloves
1 red onion, minced
1 Tbsp. Dijon mustard
1 Tbsp. Sherry vinegar, or more to taste
1½ cups ice cold water
salt and pepper to taste
1 optional garnish: chopped chives or diced avocado


Place all ingredients in a food processor and puree. Season to taste.
