Beet & Blue Cheese Casserole

Preheat the oven to 350ºF.


1 lb beets, peeled and shredded
1 red onion, diced
1 cup crumbled blue cheese
1 cup light cream
salt and pepper


Spray a shallow casserole dish with cooking spray. Add the beets, onion, salt and pepper, and toss. Top with the cheese and cream. Bake 1 hour.
