Bacon & Cheddar Cornbread Muffins

From Our Kitchen

Preheat oven to 400ºF.


6 slices bacon, cooked and chopped
1½ cups cheddar cheese, grated
¾ cup scallions, chopped
1 cup cornmeal
1 cup all purpose flour
1 cup buttermilk
⅓ cup milk
2 eggs
2 Tbsp. butter, melted
4 tsp. sugar
2 tsp. baking powder
1 tsp. salt
½ tsp. baking soda
¼ tsp. black pepper
1 tsp. chili powder


In a bowl, mix together bacon, cheese, scallions, cornmeal, flour, sugar, baking powder, salt, baking soda, pepper and chili powder. Make a well in the center and add eggs and both milks. Mix together. Mix butter in.

Spray muffin pan and add batter halfway up muffin pan. Bake until golden brown, about 14-16 minutes.
