2½ lbs apples
½ cup sugar
¼ tsp. cinnamon (to taste)
⅛ tsp. nutmeg
Peel, core and slice about 2 ½ pounds of apples. This will be about six good-sized apples. I recommend Cortlands as they make excellent applesauce.
Place sliced apples in a saucepan and add ½ cup of water.
Cover and bring to a boil. Lower the heat and cook, covered, until the apples are tender (about 5 to 10 minutes) – stirring occasionally.
Uncover and stir in remaining ingredients.
Continue cooking, uncovered and stirring often, until sugar and spices are well blended and applesauce is cooked – about 2 to 3 minutes.
This will make a chunky applesauce. Serve warm or chilled.
