Zucchini Parmesan

Preheat oven to 350°F


2 zucchini, sliced
3 cups seasoned breadcrumbs
3 eggs, beaten
2 cups flour
1 cup olive oil
2 cups marinara sauce
1 cup mozzarella cheese, shredded


Cut the zucchini into slices. Dredge each slice in flour, dip into egg, then coat with breadcrumbs. Fry zucchini in olive oil over medium high heat until golden brown.

Layer zucchini slices in a small baking dish. Cover with marinara sauce and cheese. Bake at 350°F for 30 minutes, or until cheese is lightly browned.
