Stir-fried Brussels Sprouts

Ingredients

1 lb. brussel sprouts, thinly sliced down to the base
1 medium yellow onion, thinly sliced
1 red bell pepper, thinly sliced
1 Tbsp. garlic, chopped
1 Tbsp. ginger, chopped
2 Tbsp. soy sauce
2 Tbsp. olive oil

Method

Heat olive oil in a large sauce pan over medium high heat. Add onion and lightly brown – about 2-3 minutes. Add bell pepper, garlic and ginger. Cook for 1 to 2 minutes until aromatic. Add brussel sprouts and soy sauce – cook until just wilted – about one minute. Enjoy!
