Steak Calzone

Preheat oven to 400ºF

Ingredients

1 lb. pizza dough
1 lb. sirloin tips
steak spice rub
1 yellow onion, thinly sliced
1 yellow bell pepper, thinly sliced
1 bunch watercress, bottom thick stem discarded, remaining chopped
½ pint grape tomatoes, halved
1 package boursin cheese
2 eggs, beaten
olive oil

Method

Coat steak with your favorite spice rub. Roast in the oven until rare, about 5-6 minutes. Set aside.

Heat 2 Tbsp. olive oil in a large sauté pan over medium high heat. Add onions and cook until light, golden brown. Add peppers and cook until tender, about 4-5 minutes. Add tomatoes and cook 1 minute. Set aside and cool.

Cut tips into bite size pieces Put in a bowl Add onion mixture, watercress and a pinch of the spice rub, Using a rolling pin, roll pizza into a flat circle. Place some of the steak mixture into the center making sure you can close it without spilling out. Spread cheese on top f mixtures. Brush outer edge of lightly with egg. Fold dough over and connect to the other side. Press side together to close.

Lightly brush calzone with egg. Poke 4-5 small slits on the top. Place on a sheet pan and bake until golden, about 12-15 minutes.
