Spinach Pie

Prepare the following ingredients: wash spinach, dice onions, crumble feta, thaw filo dough, slice tomatoes, beat eggs. Preheat oven to 325°F.


2 lbs. spinach
2-3 medium onions
¾ lb. butter
¾ lb. cottage cheese
¾ lb. feta cheese
1 box filo dough
1½ Tbsp. sugar
1 pint cherry tomatoes
5 eggs


Melt half the butter in a pan with the onions. Add sugar and tomatoes and cook until they begin to caramelize. Combine cottage cheese, crumbled feta cheese and eggs. Add tomato/onion mixture and spinach to the cheese and eggs. Mix well.

Melt remaining butter and pour half into the bottom of the casserole pan. Place ⅓ of the filo dough in the pan. (Layer like making lasagna) Add half of the spinach mixture, then another third of the filo, then the remaining spinach mixture. Top with the final third of filo dough.

Pour remaining melted butter on top, spreading to cover the filo dough evenly. Cook at 325°F until brown, about 20-30 minutes.
