Spicy Shrimp with Wide Noodles & Roasted Red Pepper Sauce

Ingredients

½ recipe basic pasta dough
1 lb. raw shrimp, cleaned
1-1½ lbs. roasted red peppers
1 bunch broccoli rabe, cut into small pieces & blanched
2 shallots, peeled and chopped
1 Tbsp. sherry vinegar
1 tsp. chili flakes
extra virgin olive oil
salt and pepper

Method

Roll out pasta on setting 7 and cut into wide noodles. Heat 1 Tbsp. olive oil in a saucepot over medium heat. Add shallots and cook until golden brown, 8-10 minutes. Add vinegar and cook for 30 seconds. Add red peppers an simmer for 30 minutes. Puree and strain. Adjust seasoning. If sauce is too thick, add a small amount of water.

Cook pasta until tender, 3 minutes. Drain and toss with sauce and broccoli rabe. Divide into bowls. Heat 2 tsp. oil in a large sauté pan over medium-high heat. Add shrimp, chili flakes, salt, and pepper. Cook until shrimp are just cooked through. Arrange over pasta.
