½ pound chicken livers
⅓ cup soy sauce
½ tsp. ginger root, grated (optional)
12 slices bacon (approximately)
water chestnuts, Sliced
scallions trimmed to 3 inches (optional)
wooden toothpicks


Cut the chicken livers into two or three pieces. Put them into a small mixing bowl with the soy sauce and ginger. Stir to coat and marinate for at least 2 hours.

Cut the bacon slices in half. Place a piece of chicken liver on each piece of bacon, and add a slice of water chestnut and a trimmed scallion. Wrap the bacon around all and secure with a toothpick. Place on a broiler pan and broil for approximately 5 minutes on each side, turning once, until the bacon is crisp. Serve warm.
