Roasted Grape Tomatoes

From Our Kitchen

Pre-heat over to 200ºF.


2 pints grape tomatoes, cut in ½
2 Tbsp. garlic, chopped
¼ cup chopped herbs (basil, thyme, oregano, & rosemary mixed)
¼ cup olive oil
salt & pepper


Cut tomatoes in ½, chop garlic and chop herbs.

Toss All ingredients together.

Place a wire rack on a baking sheet. Place tomatoes, cut side up on rack. Put in oven and cook for 20-30 minutes.

Tomatoes should shrivel, but not get much color. Roast longer if needed. Remove and let cool.
