Refrigerator Bread & Butter Pickles

5 - 6 pickling cucumbers (about 2 pounds)
4 small white onions
3 Tbsp. kosher salt
1 cup white vinegar
¾ cup sugar
2 tsp. mustard seed
¼ tsp. ground turmeric
¼ tsp. celery seed
3 whole cloves
¼ cup water


Wash the cucumbers and slice them thinly into a glass or stainless steel bowl. Peel the onions and slice them very thinly. Separate the onion slices into rings and add them to the cucumbers. Sprinkle the onions and cucumbers with the salt and mix.

Cover with water and let soak for 2 to 3 hours. Drain.

Mix the remaining ingredients in a small saucepan. Bring them to a boil, remove from the heat, and pour over the cucumbers and onions. Stir to mix, all the ingredients. Cover and refrigerate for 3 days, stirring occasionally.
