Quinoa & Black Bean Salad

Preheat oven to 350ºF


2 cups cooked quinoa
1 15oz. can black beans, drained
1 small yellow onion, diced
1 poblano pepper, diced
1 red bell pepper, diced
1 cup cooked or frozen corn
½ pint grape tomatoes
1½ tsp. garlic, chopped
2½ Tbsp. lime juice
¼ cup + 2 Tbsp. olive oil
1 tsp. cilantro, chopped
1 tsp. cumin
1 tsp. oregano
1 tsp. chili powder
salt and pepper


In a bowl mix together onion, peppers, tomatoes, garlic, cumin, oregano, chili powder, and a pinch of salt. Lay out on a sheet pan and roast until golden brown, about 12-15 minutes. Let cool completely.

In a bowl, mix together vegetables, quinoa, black beans, cilantro, lime juice, remaining olive oil and salt and pepper to taste.
