Pumpkin or Squash Muffins

Preheat oven to 400°F


1½ cups flour
½ cup sugar
½ tsp. salt
2½ tsp. baking powder
½ tsp. cinnamon
¼ tsp. nutmeg
⅛ tsp. clove
1 egg, beaten
4 tbsp. butter or margarine, melted and cooled
½ cup milk
¾ cup pumpkin or squash, cooked and mashed


Sift the flour, sugar, salt, baking powder, cinnamon, nutmeg, and clove into a large mixing bowl.

In another bowl, mix together the remaining ingredients. When thoroughly mixed, stir the milk mixture into the dry ingredients.

Stir only until the dry ingredients are moistened. Do not beat. Spoon into well-greased muffin pan. Makes 8 large muffins.

Bake at 400°F approximately 20 minutes.
