Potato & Swiss Chard Gratin

Preheat oven to 350ºF.


½ Tbsp. butter
1 lb. Yukon Gold potatoes, peeled and thinly sliced
1 bunch swiss chard, ribs discarded, chopped
¾ cup Gruyère cheese, grated
1 Tbsp. garlic, minced
1½ cups light cream
1½ tsp. Herbs de Provence
¾ tsp. salt
¼ tsp. pepper


Heat ½ Tbsp. butter in a large sauté pan over medium heat. Add garlic and cook until golden brown. Add swiss chard and wilt, about 2 minutes. Set aside.

Mix potatoes, swiss chard, cheese, Herbs de Provence, salt and pepper. Place in a shallow baking dish and pour cream in. Place in oven and bake until potatoes are just cooked, about 25 to 30 minutes. Enjoy!
