Ingredients

1½ lbs. lean beef
4 Tbsp. butter or margarine
1 clove garlic, peeled
3 large green peppers, seeded and sliced into ¼-inch strips (1 ½ pounds)
½ cup scallions, sliced
1½ cups mushrooms, ¼-inch-sliced
1⅓ cups beef broth
¼ cup water
2 Tbsp. cornstarch
2 Tbsp. soy sauce
¼ -½ tsp. ground ginger
cooked rice (optional)
