Open Peach Almond Pie

Prepare enough pastry for an unbaked 9-inch pie shell. Preheat the oven to 400°F.


3½ cups peaches, peeled and sliced
⅔ cup sugar
⅓ cup flour
⅛ tsp. nutmeg
1 cup heavy cream
⅛ tsp. almond flavoring
⅓ cup slivered almonds


Mix the peaches, sugar, flour, and nutmeg and place in the pie shell. Blend the cream and almond flavoring and pour them over the peaches.

Bake at 400°F until set – about 35 minutes. Remove from the oven and sprinkle with the slivered almonds. Return to the oven and bake for 5 minutes more.

Serve at room temperature or chilled.
