Mustard Crusted Haddock

Preheat the oven to 425°F


2 lbs. haddock fillets
½ cup mayonnaise
1-2 Tbsp. fresh lemon juice
2 Tbsp. Dijon mustard
½ cup Vigo seasoned breadcrumbs
Salt and Pepper
Chopped parsley, to garnish


Spray a sheet pan with cooking spray. In a bowl, mix the mayo, mustard, lemon juice, salt and pepper. Lay the fish, skin side down on the prepared sheet pan. Spread the mayonnaise mixture onto the top of the fish fillets. Sprinkle each with the breadcrumbs. Bake
8 to 12 min. depending on the thickness of the fish.
