Mixed Vegetables, or Peppers, Onions Tomatoes & Zucchini

Ingredients

1½ Tbsp. vegetable or olive oil
1 medium to large yellow onion, sliced (¼ to ½ pound)
1 large green pepper (2 small) in ¼-inch strips
1 lb. zucchini (2 medium), sliced into thin rounds
½ tsp. salt
1 Tbsp. fresh basil, chopped (½ tsp. dried)
2 -3 tsp. oregano, chopped fresh (½ tsp. dried)
1½ -2 cups tomato, peeled, chopped (seeded, if desired)
3 Tbsp. Parmesan cheese, grated

Method

Heat the oil in a frying pan. Add the onion and pepper and sauté until the onion is soft (3 to 4 minutes). Add the zucchini, salt, basil, and oregano and cook over low heat until the zucchini softens (4 to 5 minutes). Add the tomato and cook for 5 minutes longer or until the tomatoes cook down and the vegetables are done. Stir in the cheese.
