Lettuce & Chipped Beef Tidbits

Ingredients

1 package chipped beef, cooked
1 Tbsp. butter
¼ tsp. garlic, minced
4 oz. cream cheese, softened
½ tsp. lemon juice
1 Tbsp. mayonnaise
2 tsp. parsley, chopped
8 leaves boston lettuce, washed and dried

Method

Chop the beef into small pieces. Melt the butter in a small frying pan over medium heat and add the chopped beef. Sauté the beef for 1 to 2 minutes. Add the garlic and sauté for 1 minute longer. Do not brown the garlic.

Mix the hot beef, garlic, and remaining ingredients, with the exception of the lettuce, in a mixing bowl. Place in the refrigerator to chill for at least 1 hour.

When firm, place bite-sized portions (1 tsp.) of beef filling on small pieces of lettuce (about 3 inches squares). Fold or roll the sides and ends of the lettuce pieces in to cover the filling. Secure with toothpicks. Cover with a damp dish towel and refrigerate if not serving immediately.
