Grated Parsnip Patties

3 cups parsnip, peeled, grated (about ¾ pound)
2 Tbsp. onion, finely chopped
2 eggs, beaten
⅓ cup flour
1 Tbsp. butter or margarine, melted
¼ cup milk
½ tsp. salt
⅛ tsp. freshly ground pepper
1 -2 Tbsp. oil or solid shortening


Mix all the ingredients, with the exception of the oil, in a large bowl.

Place a small amount of oil (1 to 2 Tbsp.) in a large frying pan over medium heat. When the oil is hot, drop the parsnip mixture into the pan by spoonful’s. Flatten them into 2-inch patties with the back of the spoon.

Fry, turning once, until the patties are brown on both sides – about 5 minutes per side.
