Fried Oysters

Preheat fryolator to 350ºF.


2 lbs. oysters, shucked
2 cups corn meal
1 Tbsp. paprika
1 Tbsp. cajun seasoning
1 Tbsp. old bay
1 Tbsp. parsley, chopped
1 tsp. salt
1 tsp. pepper
2 cups buttermilk
2 eggs
2 cups flour

Remoulade Sauce:

1 cup mayo
½ cup sweet relish
¼ cup Frank’s Red Hot
1 lemon, zested and juiced
1 Tbsp. capers


Add spices, herbs and cornmeal together in a bowl and stir until evenly mixed. Set aside. Mix together buttermilk and eggs. Soak oyster in the buttermilk mix. Remove and toss in flour to coat. Dip again in buttermilk mix, then coat evenly with cornmeal and spice blend. Add coated oysters to the hot oil and cook for 7 minutes. Serve hot with Remoulade Sauce.

Remoulade Sauce:
Mix all ingredients together and season with salt and pepper to taste.
