Fried Green Tomatoes

Ingredients

5 green tomatoes, cored, seeded, cut in ½
¼ cup olive oil
2 tsp. salt
1 tsp. pepper
1 tsp. garlic, chopped
½ stick butter, melted
2 cups bread crumbs
½ cup parmesan cheese

Method

In a bowl, mix butter, bread crumbs and parmesan cheese. Set aside.

In another bowl, mix olive oil, salt, pepper, and garlic. Toss tomatoes in oil mixture and pour into a large skillet. Fry on high heat until tomatoes are golden brown.

Remove tomatoes from skillet and let cool slightly. Stuff each tomato half with bread crumb mixture, and broil for three minutes.

Serves 8-10
