Five Spice Chicken

Preheat oven to 350ºF


1 5 lb. whole chicken (cut in half)
1 lime (juiced)
1 Tbsp. rice vinegar
1 Tbsp. Chinese five spice powder
2 tsp. chopped ginger
1 Tbsp. chopped garlic
2 Tbsp. soy sauce
1 tsp. chopped cilantro


Using a fork, pierce chicken skin numerous times. Add remaining ingredients in mixing bowl and marinate chicken halves for 4 hours. Roast Chicken in oven until an internal temperature of 160 degrees is achieved. Pull chicken out of oven, cover with foil and let rest for 10 minutes. Cut chicken into desired portions and squeeze a little fresh lime juice over portions to be served. Garnish with chopped fresh cilantro.

Garnish: ½ Lime for juicing and 1 tsp. chopped fresh cilantro
