Cranberry Chutney

2 lbs fresh cranberries
1 quart orange juice
1 Tbsp. red wine vinegar
1 Tbsp. crystallized ginger
1 Tbsp. ground allspice
1 Tbsp. ground coriander
2 Tbsp. sugar
ΒΌ tsp. salt
pinch cayenne


In a pot over medium heat, reduce orange juice by half. Add remaining ingredients and let simmer for 30 to 40 minutes. Adjust sugar.

Depending on the tartness of cranberries, you may need to add more sugar.
