Cranberry Banana Bread

Preheat the oven to 350ºF. Grease a 9-by-5-inch loaf pan.


¼ cup butter or margarine, softened
2 eggs
1 cup sugar
1¾ cups flour
½ tsp. baking soda
1½ tsp. baking powder
½ cup banana, mashed
1 cup cranberries, coarsely chopped
¼ cup water
1 tsp. vanilla
1 tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg
2 cups apple, peeled coarsely chopped
½ cup nuts, chopped


Cream the butter and sugar in a large mixing bowl. Beat in the eggs with an electric mixer. Stir in the banana, cranberries, water, and vanilla.

Sift the flour, and baking powder, baking soda, salt, and cinnamon together and stir them into the batter. Add the chopped nuts. Place in the prepared pan and bake at 350ºF for approximately 55 minutes.
