Chicken Chorizo Stew

10 lbs chicken, cut into ¼ inch cubes
20 lbs yukon gold potatoes, cut into ¼ inch cubes
10 lbs chorizo, cut into ½ inch pieces
2 onions, diced
3 tbs garlic, chopped
1 can plum tomatoes
1 bunch basil, chopped
to taste salt & pepper


Saute potatoes and sausage until brown. Add onions, garlic and tomatoes. Sauté chicken in another pan until brown. Add to mix then finish with basil and simmer until potatoes are done.
